my mom's oatmeal cookies

  •  1 cup shortening
  • 1-1/2 cup brown sugar
  • 2 eggs
  • 1/2 cup buttermilk*
  • 1-3/4 cup sifted all purpose flour
  • 1 tsp. soda
  • 1 tsp. baking powder*
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 1 tsp. nutmeg
  • 3 cups quick cooking rolled oats
  • 1 cup raisins (cooked for 5 min. in 1 cup of water, add both to recipe)
  • 1/2 cup walnuts

oatmeal cookies on cooling rack

Pre-heat oven to 400° F. Cream shortening, sugar, and eggs together till fluffy. Stir in buttermilk. Sift together dry ingredients; stir into creamed mixture. Stir in oats, raisins and nuts. 

Drop on a greased cookie sheet 2" apart. Bake about 8 minutes in preheated oven. Cool slightly and remove from pan to cooling rack or a clean towel on a countertop.  Makes 5 dozen.


*alternatively, you can use regular milk instead of buttermilk (if so reduce soda to 1/4 tsp and only use 2 tsp baking powder)
