Below is my immune boosting garlic beef stew with an entire head of anti-bacterial garlic which acts as a natural antibiotic and of course vampire deterrent. ;) like roasted garlic's sweety savoriness tastes so different from spicy, raw garlic... this stew is mellow, warm and full of healthy things like sage (anti-microbial), cabbage (antioxidant) and iron-potent beef broth (to boost those red blood cells).
ULTRA Garlicky Beef Vegetable Stew
1 lb lean beef cut into 1 or 2 inch cubes
1 tsp. flour
4 tbs. olive oil
3/4 c. celery chopped into 3/4 inch pieces
1 large onion minced
4 cups water (or 2 c. water + 2 c. beef broth)
1 pkg. dry onion soup mix
1/4 red wine (or use 1 tbsp. applecider vinegar or red wine vinegar)
12 cloves garlic (peeled, pretty much the whole head cleaned)
1/2 tsp. dried thyme
1/2 tsp. cayenne or red pepper
1/8 ground dried sage
1/4 tsp. dried marjoram
1/4 tsp. salt (sea or kosher if you have it)
2 medium carrots, halved and cut into 1/4 inch pieces
1 red or green bell pepper cut into 1 inch pieces
4 small new potatoes, cut into 1 inch cubes
1 tbsp. of soy sauce (or Braggs Liquid Aminos)
1-1/2 cup of cabbage (or 1/4 head of cabbage)
Coat beef with flour and set aside. Heat 2 tbsp. oil in a large pot and brown beef (till medium) over medium heat for 10-12 minutes. Drain off most of fat, add celery and onion and saute for 3 minutes over medium heat. Add water and broth and bring to a boil. Reduce heat; add soup mix, wine, garlic, spices and beef. Mix thoroughly and simmer for 30 minutes, then add rest of ingredients and cook for 1-1/2 hours. Add cabbage during the last 30 minutes of cooking. Cook on medium heat until vegetables are tender and garlic has dissolved.
