Turkey Stock / Cranberries in Gelatin / Tom & Jerry / Natives vs Pilgrims

Cranberries & Tangerines with sugar free gelatin (vegetarian & diabetic friendly)

2 tangerines (peeled with pith removed) with segments cut in halves
1/2 package of cranberries (about 6 ounces), coarsely chopped
1 package of sugar free raspberry jello

Add 1 cup of boiling water to jello and stir till dissolved.  Stir in 1 cup of cold water (if you aren’t concerned about diabetic friendly, this step can substitute 1 cup of apple juice or hibiscus tea instead optionally).  Add combined cranberries & tangerines (finely chopped zest peel optional). Pour into a jello mold or bowl, cover and put in the fridge about 3 hours till set.



Turkey Stock (Broth)

1 gallon of water
1/8 cup of soy sauce
1 stripped turkey carcass (bones, skin, giblets, livers, all the rarely eaten bits of the animal that gave up its life to give you protein and a tryptophan induced nap.  I like to make use of as much of the creature as possible both out of respect and because it’s delicious)

After carving your turkey and removing most of the meat for separate serving you can make use of the bones & other odd bits by making stock.  Add all the above ingredients to a very large stock pot with a lid and boil on high heat.  The water does not have to completely cover the bones, just stir often and turn over the carcass until it falls apart.  Cook over several hours depending on how strong & concentrated you want your broth to be.  When ready with nice color, use a colander to strain the liquid into another container which will separate the bones & bits from the liquid broth.  After the solids cool, they can be thrown out or composted.  The liquid stock is the part you keep.

The stock broth can be used in lots of other recipes or frozen & used in the future.  By adding noodles or dumplings to the stock, you have a simple soup where you can optionally add veggies, herbs or meat of your choice.  Other people use stock when cooking beans to add nutrients.

This is a most basic & nutritious stock recipe and you can add all sorts of optional things to it and make a million different dishes.
